I love the changing of the seasons and it’s definitely something that we get to enjoy fairly frequently here in the Pacific Northwest. The transition from summer to fall is probably my favorite of the whole year. I love the crisp air, the changing leaves and the comfort food that is associated with the colder weather. Updating my wardrobe to feature more boots, scarves and sweaters is also a great part of the new season as well!
As we’re moving into fall, I’ve really started to embrace warmer and heartier meals. Throughout the summer I find we eat more salads and lighter fare in our household. In the fall, I love to add in more soups, stews and slow cooker meals. I recently made this stew and it was delicious. I made a few modifications to it as I didn’t have all the ingredients on hand, but I think that if you followed the recipe exactly you would still find it tasty.
