I had some pickled cucumbers earlier this summer from my mom and forgot to make my own until now. My parents have a large garden and were looking for ways to use up cucumbers. These quick pickled cucumbers are simple to make and delicious.
The cucumbers are crisp, tangy and sweet all in one. Using apple cider vinegar adds in some extra sweetness along with the sugar too. They are really easy to create and can be altered to your liking based on how much you dilute the vinegar or how much sugar you add.
1 cup water
1/3 cup apple cider vinegar (or vinegar of preference)
3 Tablespoons sugar
1 teaspoon salt
1 large seedless cucumber
Slice cucumber into thin pieces and place in jar. Mix water, vinegar, sugar and salt in a bowl. Add liquid mixture to jar. If the cucumbers aren’t fully covered add in additional water and vinegar to taste. Cover with lid and enjoy for one week. You can reuse the brine with newly sliced cucumbers.
