Often times when I go to Costco I like to pick up a rotisserie chicken because for one they are a great deal but also delicious! They provide us with several meals throughout the week which is always a great bonus. This past week I had one in the fridge and decided to turn it and some additional leftover vegetables into a chicken pizza.
It’s a really simple meal, especially if you buy pizza dough pre-made and I think it’s rather tasty too. I’m always looking for new recipe ideas when it comes to leftover chicken. Here are some supplies to help make your pizza!
Pizza dough (I love to use Trader Joe’s Herb & Garlic Pizza Dough)
1/2 red pepper diced
1/2 red onion diced
1 to 2 cups of grated mozzarella cheese
1 cup rotisserie chicken
Pre-heat oven to 400 degrees or whatever the recommended temperature is for the pizza dough you chose to use. Place stretched out dough onto pizza stone or pan. Cover the top of the dough with bbq sauce. Add cheese on top of the bbq sauce. Then top with the red peppers, red onions and rotisserie chicken. Add a bit more cheese on top and put into oven. Bake for 12-15 minutes or the recommended time based on the dough baking instructions. Remove from the oven and enjoy!
