Last year for Christmas my husband gave me a . I had been wanting one for a while and I think he picked up on my hints. 🙂 All year long we talked and talked about making a frittata but for whatever reason I just never got around to making one. It sort of became a running joke in our house.
The other night for dinner we were going to have leftovers, but I wasn’t super into it. So I thought I’d try reinventing the leftovers which is always an interesting challenge. No one typically wants to eat the same meal several times in a row so I try to change it up. My mom cooked a ham on Christmas and we took home some leftovers. I was trying to decide what to make and found that I also had several veggies in the fridge on hand. Enter the ham and cheese frittata with vegetables!
I searched for a cast iron skillet frittata recipe and decided very quickly that it would be super simple to make. I put together my own recipe and we had dinner on the table from start to finish in just about thirty minutes, and it was really tasty!
Ingredients:
10 asparagus spears chopped
1/2 red pepper chopped
6 eggs
2 Tablespoons milk
3/4 cup shredded cheese
1 cup cooked ham
salt to taste
pepper to taste
1/2 Tablespoon Italian seasonings
Pre-heat oven to 400 degrees and drizzle a small amount of olive oil in a cast iron pan. Saute asparagus and red pepper for a few minutes until tender on medium heat (if you have different veggies that’s fine just make sure they are prepared similarly. In a separate bowl whisk eggs, milk, cheese and spices together. Add in chopped ham and pour contents into skillet on medium to low heat. After about 3-4 minutes place frittata in the oven and bake for 10-12 minutes. Remove from the oven and enjoy!
