GF Pumpkin Bars

As we are getting closer and closer to Halloween and Thanksgiving, I have been trying out different pumpkin focused recipes. The one I am going to share today has so far been my favorite and might just be one of the best desserts I have made to date.

I had a girlfriend coming over for dinner on Saturday night and wanted to make a sweet treat for dessert. I searched quite a bit online and finally came across this recipe. I did end up altering it some but I really liked the ingredients that the recipe called for, especially the applesauce and pumpkin.

These bars are actually more like a cake. It is that moist, fluffy and delicious. This is a great gluten-free recipe that doesn’t taste at all “gluten-free.” I am even considering taking this dessert for Thanksgiving, it is that good. And don’t even get me started on the cream cheese frosting… it’s way way better than out of a can!

Gluten-Free Pumpkin Bars

2 cups gluten-free flour (I used Bob’s Red Mill)

1 tsp. xanthan gum (use unless your flour already has it mixed in)

2 tsp. baking powder

3 tsp. pumpkin pie spice

1 tsp. baking soda

1 tsp. salt

4 eggs

1 2/3 cup sugar

1/2 cup oil

1/2 cup applesauce

15 oz. pumpkin (1 small can)

1/2 tsp. vanilla extract

Cream Cheese Frosting

3 oz. cream cheese (softened)

1/2 cup butter (barely melted)

1 tsp. vanilla extract

2 cups powdered sugar

3/4  cup of chopped pecans

Turn oven on to 350 degrees. Stir together flour, xanthan gum, baking powder, pumpkin pie spice, baking soda and salt in a bowl. Set aside. Using a separate bowl or mixer, beat the eggs, sugar, oil, applesauce, pumpkin, and vanilla extract until light and fluffy, around 3 minutes. Turn the mixer on low, add the flour mixture. Don’t over mix. Spread batter in an ungreased 9×13 inch pan. Bake for 30 minutes or until a toothpick inserted into the center comes out clean. While the dessert is cooling, mix together all frosting ingredients (except pecans) until they are blended well. Once the bars are cool, spread the top with frosting and for an added crunch sprinkle with pecans. Enjoy!
